Back when people thought that the universe was made up of only a few elements, the Earth Element was thought to encompass all solid matter. Being earthlings ourselves, our existence depends on a surface to stand on - so this element came to be one of the four classical elements that we thought formed the basic building blocks of life.

We weren’t wrong, but leaps in science proved that it wasn’t as simple as we once thought. Nevertheless, Earth and other Greek classical elements were incorporated into the Golden Dawn system that inspired Wicca magic and modern mysticism. During a ritual, a mystic might invoke the Earth element to secure stability in the home, in health or in employment (the witchcraft jobs market can be pretty competitive).
